Happy spring, yall! The weather has finally gotten warmer in our neck of the woods and I am LOVING it! We had spring break last week, so we’re slowly getting back into the swing of “normal life”.

This was our first real spring break (we’ve never had school age kids before) and it snuck up on me! My LEO had to work the majority of it, but we still had the best time going to the park and hanging out outside. We even squeezed in an overnight trip to see our cousins for two days-we ate, hiked, played, and enjoyed the sunshine. The perfect little getaway in my book!

This past weekend we had a little Masters Par-tee in honor of the golf tournament-it was so fun! If yall have been around while you know I love a good party and a good theme. We had so much fun making Augusta themed treats and drinks, and the grown ups got to chat and watch the final few holes on the patio while the kiddos ran around outside. Church and then enjoying good food with friends-my perfect Sunday!

You might have noticed that I’ve gone back to being on the quieter side over on social media. As always, the less I scroll, the better I feel! This morning when I logged in to post for Dispatcher Appreciation Week (Shout out to the thin gold line! We so appreciate you!!) Instagram gave me the below prompt: to post an unpopular opinion. I know that controversial takes are all the rage right now, and I’ve shared a few of mine (that I really don’t think are actually controversial at all-you can see my “hot takes” post below) but posting just to spark arguments and debates (and in turn please the algorithm for more follows and views) is so not my thing 😅

So, I’m going to be better about sending out regular newsletters (they come out monthly!) and posting more on the blog. Police Station Hot Wheels Track. We got this for Christmas and it’s been a favorite toy ever since! We love open ended toys in our house, and cars and adjustable tracks are always a hit.

These first responder Magnatile sets. Every time I share this Magnatile set y’all love it just as much as we do! We’re a big Magnatile family and these sets make them even more fun. We have both police sets as well as a fire set (shh-don’t tell my LEO husband 🤪😂).

What to Cook When You Don’t Feel Like Cooking. When I shared a little vlog of our pre soccer and tball night/dinner prep the other day I was cooking the enchilada skillet out of this book. I’ve been a huge fan of Caro Chambers’ recipes for years and have bought probably a dozen copies of this cookbook to gift-it’s just that good!

In January I shared about our family’s new favorite coffee brand-Duty to Act. I just placed another order to restock my LEO’s kcups (he prefers the medium roast) and it reminded me to share them here!

Since the weather has gotten warmer I’ve been loving more “summery meals”-give me all the burgers, pasta salad, and BBQ chicken! We’ve also been in full sports mode over here and have several nights per week where we don’t get home until past our normal dinner time. I’ve been drawn to meals that are one pot, take very little time, and/or can be prepped and cooked ahead of time.

One of my favorite hands off meals is crockpot Caesar chicken. It takes approximately 90 seconds to prep and is ready and waiting for you whenever you get home!

Crockpot Caesar Chicken

Add uncooked chicken (we typically do breasts, but you can do tenderloins or thighs-whatever you want) to your crockpot, and top with bottled or homemade Caesar dressing until it’s all pretty much covered. Cook on low for 6-8 hours or until the chicken is cooked through. Give it a stir every couple of hours if you’re home-no worries if not.

That’s it. Seriously! That’s it! It’s so simple it doesn’t even feel like a recipe. Talk about a shortcut supper!

Once the chicken is done we typically shred it and serve it over rice with a side of steamed broccoli-with a sprinkling of Parmesan over everything, of course! It’s also good added to a wrap-just stick the shredded chicken in a tortilla, add some parm, and call it a day!
